I've thought about this before, but can't remember if I ever wrote it down or not. An easy-to-make drive mechanism for a human-powered vehicle (HPV) could be as simple as a piece of channel stock, steel or aluminum, with holes drilled at appropriate intervals and bolts with nuts through the holes. These could effect a rack-and-pinion drive using any bicycle gear bolted to a wheel.
